Belgian Waffle Cookies
- 1/2 lb butter
- 1/2 cup margarine
- 6 eggs
- 1 lb brown sugar
- 1 oz. whiskey (2 tbls)
- 1 oz. vanilla (2 tbls)
- 1 oz. rum extract (2 tbls)
- 1 cup sugar
- a pinch of salt
Cream the butter, margarine and sugar. Once combined, add the eggs and mix until smooth. Add remaining liquids. Add flour slowly until you have a batter that resembles a drop cookie batter. Spoon batter onto hot C. Palmer iron. Cook approximately one minute, remove with fork and cool on wire racks.
Choose your iron based on how thick you like your waffle cookies.
